Food is good. Videogames are good. Food inspired by videogames is doubleplusgood. It’s simple science. Science and art. The third episode of Steven Hansen’s À la cartridge is inspired by Rayman Legends. In my quest to become the Alton Brown of videogames, will I become videogames’ Guy Fieri?

Last week we went quintessential Americana with the Killer is Dead Mondo Burger. Now, we’re heading south of the US border, to Mexico, to duck those murder raps and eat some Legendary Chilaquiles. Rayman Legends is a great couch co-op game and chilaquiles is a chill-and-easy dish that serves plenty.

Feel free to stir some scrambled eggs in as well. Go nuts. It’s in the spirit of Rayman. I almost added candy eyeballs to everything.

Rayman’s Legendary Chilaquiles

Ingredients:

  • Canned chipotle peppers
  • 2-3 tomatoes
  • Garlic
  • Tortillas (or store bought chips, tostadas)
  • Chicken
  • Queso fresco
  • Mozarella
  • Cilantro
  • White onion

Instructions:

Blend the following: 2-3 chipotle peppers, 1 cup water, several cloves of garlic, salt, 2-3 tomatoes. Adjust for taste and spiciness.

Place chopped white onions on pan with some oil. Let cook a few minutes. Add salt/pepper seasoned chicken breasts to pan. Cook on medium high for about a minute on each side, then add the previously made sauce to the pan. Cover and set burner to low. Let cook for 10-20 minutes.

Shred chicken with a fork, or cut into small chunks with a knife. Add tortilla chips. Bonus point if you fry some corn tortillas and make your own. Top with a mix of queso fresco and mozarella, cover and let melt. Finish with some cilantro.
