I also want my game on disc. But I want to have all my games on my PSP as well. That's why I'm getting a PSPGo as well. And of course I will keep my fat one too.
There's absolutely nothing the 3000 can't do that the Go can. You want to download games? That's fine, just put them on the Stick. I myself bought Persona as a disc, and I couldn't be happier.
Also, I'm glad you like the Peace Walker demo -- I think the controls are ass.

There are actually two things the 3000 can't do.
1) Utilize a special sleep feature that saves the game state so you can use the XMB while playing. This is not the same as the PSP 1000-3000 sleep feature, which the Go also has.
2) Bluetooth.
I might use the first occasionally, but never the second.
For my consoles I still usually prefer to have a physical disc for my games but I'm all for digital downloads on my handhelds. It's such a pain to have to carry extra games in case you feel like playing something else. Plus I can't find my copy of Clubhouse Games anymore >:@
