my friend just got a 65nm one and says it runs nice and quiet compared to his older version that broke. He's going to try and sell his old one when it gets back from microsoft. My system (that i got last christmas) just kicked the bucket so I feel you on not wanting to deal with returns.
My advice is to not worry about it anymore and just get the 360 if you want one. Sure the 65nm chips are more heat efficient but even the 90nm shouldn't be a problem now that they slather the motherboards in epoxy that stops the board from warping and have thrown in another heat sink.
Falcons are supposed to not have this problem.
If you want to know which one Falcons are, look on the back label of the system. The Falcons list 175W on the serial number label on the console. If it doesn't have "175W" listed on the back, it's not a Falcon. 90nm chip based 360's will list "203W" on the back.
Also, contrary to reports, they don't run any quieter, but they are cooler.
Reaprar's suggestion of "take care of your console" isn't something that's in your control. If it's going to RROD, it'll do it. If Reaprar's avoided it for this long, he's just lucky, not careful.
I've had 3 - 360's, each of them have broken on me. All three have been babied.
I side with AD on this. Don't worry about it. If you can find a Falcon, there's nothing to worry about. And even if you can't, RROD's are a shot in the dark, you never know if it'll ever happen to you. There are LOTS of people who have launch consoles who've never had RROD's.

There is no proof that the Falcon chip reduces the red ring error. Dealing with Microsoft is a nightmare, I'm having to send my console back for the sixth time because they refuse to replace my console or do it right. As the other guy said, no matter how much you take care of it, it will die regardless.
I believe my model has the Falcon chip as everything a Falcon model is supposed to have checks out. I have the unit sitting horizontally and not vertically as to avoid covering one of the console's biggest vents. The air runs cool out of the right side's vent, but is pretty warm in the back. It makes a surprising bit of noise, but I think that may be because 1) I'm used to the silence of the Wii and PS3 and 2)I've never heard a 360 before (so it may actually be quieter than older models).
I didn't buy a 360 for the longest time for the same reason you have: Because it's such a hassle. However, I had reached my breaking point and found a great deal that scored me some extra free games as well as a falcon model. I've decided to accept the consequences, and if the falcon model ends up dying in about a year, then it's very likely that M$ will replace my unit with a newer one with a smaller GPU AND CPU as that should be the norm by the end of next year.
All I can say to you is that it is a gamble. If you decide to get one, then I suggest searching for a falcon chip model as it may be slightly difficult, but VERY rewarding (it made my love for Game Crazy even larger--PLEASE DON'T CLOSE, GAMY CRAZY!!! ;~; )
