Be warned, I do not excel with the words, but I'll do my best. I have favorites, but I try and keep an open, unbiased mind. Just because I love my XBox, doesn't mean I hate my PS3. Also just because I love my shiny new current-gen games, doesn't mean I can't appreciate old games with technically inferior graphics.

I suggest getting it on the PC... that's just my personal prefferance though, based on the fact that the console versions are all flawed.
Also Fahrenheit. There's no way you can leave either of those games off the list.
KOTOR 1 (xbox): best Star Wars game to date
Beyond Good and Evil is an Action/Adventure game with some excellent characters, some wonderful vistas and environments, and one of the best soundtracks in video game history. You live on a peaceful mining planet called Hillys that is caught in the middle of an intergalactic war. You play as Jade. A citizen of Hillys, she lives on a Lighthouse island with her adoptive Uncle Pey'j and some children who have lost their parents to the war. As a reporter, Jade suspects that there may be something "up" with this ol' war, and gets pulled into the twisted mesh of lies and conspiracy.
The sense of immersion in the game is wonderful and you really feel for the characters. The game is a cult classic, with near perfect green reviews.
Fahrenheit (aka Indigo Prophecy) is a cinematic take on the adventure game. I can't really say much about it that you shouldn't just experience for yourself, so I'm going to be a bit vague. It's a deep, intriguing psychological thriller, that aims to feel like you're playing a film. Let me put it this way; if Jack Thompson got his hands on it, he wouldn't be pratting around with GTA and Manhunt. It's a bit contraversial for it's choice of control system (you gotta be very adept with games or have perfect reflexes, it can be so hard at times), but it overall has positive reviews that are certainly higher than the average game.
Also, Psychonauts. Again, there's nothing much I can say here that you shouldn't just experience for yourself... you basically play as a trainee psychonaut; a person capable of practicing psychic abilities. The game has character, both visual and subconcious, and it's quite a unique experience. The only major flaw imho is the fact that there is very little in the way of audial reward. Games like Zelda and Pikmin constantly reward you with musical cues to let you know if you're just achieved something awesome or if something bad is about to happen. Psychonauts feels kinda empty without these, but the game is still brilliant.
