I played it at DigitalLife. The retail demo has a few less songs.

Was it difficult to know when you could hit notes? How quick did the notes move on Expert (aka were the notes faster on Expert in GHIII than GHII)? How was Hurricane? Did you like the Les Paul guitar controller better then the X-plorer, or even the SG?
It is kind of disappointing to hear that the game is easy (or easier) when compared to GHII, but I'll check it out for myself this weekend.

Nah, not really. It played identical to Guitar Hero 2, but with a bigger window for hitting the damn note. It had me getting a nearly 100% on The Metal once I got the rhythm down.
How quick did the notes move on Expert:
Not fast enough for me. I prefer to play on Hyper speed. However compared to Guitar Hero 1/2 it moves with the BPM of the song. Another standard law of music games.
How was the Hurricane:
It had a pretty fun solo tucked into there. A really good battle song. (Battle, btw, is really really really fun.)
The Les Paul was good, but not NEARLY as good as the Rock Band guitars. It did however trump the X-plorer and SG by far. Theres 2 places you can put the strap and the button placement made a lot more sense. Definitely a lot heavier but not a lot larger than previous models.
