Can I not have a link to your not emulator and not rom site so i can not play MGS for the first time?
Colony Wars 1-3, Galerians, G-Police, Blazing Dragons, Resident Evil 1-3, Star Ocean: The Second Story,

Chrono Cross was awesome. Soundtrack is so beautiful. That game has one of the hardest battle systems for the PS1. 1 wrong turn and you're fucked. Plus one of the only games I know of that allows you to run from a boss battle. (granted it doesn't do shit in your favor, it gives you a chance to see some more dialoug and maybe first turn to what...heal?)
add Xenogears it you haven't played it already. Along with Thousand Arms. Legend of Dragoon. as Mr.Sadistic said, there's a shit load of em out there that I don't remember.

Yeah forgot about The Legend of the Dragoon. It's a very underrated RPG.

Yeah, I loved the Colony Wars series. It's probably the greatest space-sim/sci-fi action game series ever. Also, G-Police 2 is cool too, it just totally slipped my mind when listing my person favorites. Like I said, I have a lot of personal Playstation classics that I lose track sometimes.
oh yea also Legend of Legaia. I remember this being a big game and turned out pretty decent. though it's a game I started and never got a chance to finish or pick up.
also Breath of Fire III and IV. Definately III.
Assuming that you've already played Symphony of the Night (Now that it's on XBLA), my only addition to this list would be Klonoa: Door to Phantomile.

Das has a point. running Wild was highly entertaining, and no worries it's not a 40+ hour bangout session like i'm about to suggest: Lunar 1 :D
Actually moreso Suikoden I and II if you've never experienced those and think that the PSP combo edition will never hit the US shores like I do.
If you have not played Xenogears, you should play it.

You know I got like 100+ hours of entertainment out of International Track and Field. I hurt my hands so bad because o f the running and rubbing your hands over two of the buttons technique. Then my disc got scratched. Twas a sad day. Have you played all three of the original GTA games?

Is Fear Effect really supposed to be that good? I almost bought a copy the other day, but passed it up.
As far as suggestions go, No One Can Stop Mr Domino is fun if you like a challengeing puzzle type game, bu I'd give a good recommendation to Swagman. Zelda-viewed walk around game with nice actiony bits sprinkled in. Also, Mega Man Legends games?
Some of my favorite PS1 games of all time came from the Spyro trilogy (Insomniac did the first three games and Universal has done all the [not as good] games since then):
Spyro the Dragon
Spyro 2: Ripto’s Rage
Spyro: Year of the Dragon
They truly were shining examples of platforming at its best.
