I think it would be cool but it would be hard to make since every fighter has their own very distinct fighting style.
MMA is a much more fluid thing than wrestling though (that video looks really stop start) and there is rarely one person in total control, any action usually has some sort of reaction or attempted escape/counter/struggle performed with it, and the video didn't really show that.
MMA is one of the hardest sports to transition to video game. This doesn't really look like the first game to be successful either. THQ did make some pretty good wrestling games, so I will hold out some hope, I'd try this no matter what anyways. Also, that didn't really look like Forest Griffin, the Rampage model was a lot more realistic.
Oh also, I hope everyone will be watching the TUF 7 finale tonight. Amir FTW!
I just hope they try something else other than the same old Crave control scheme that we've been playing since the first UFC.
