I have a bunch of my favorite fighting games I'd love to add to this topic, but I'm short on time, and I'd rather just build on yours.
Blazblue - haven't ordered it yet. But Guilty Gear? My dude was Sol, who seems VERY similar to Ragna (main-ish character, red outfit, giant sword).
Primal Rage - The cover man himself - Blizzard.

There's just something about a well-timed, four-pronged Baden Baden Lily. Also, she has the coolest drive in the game.

Vega has a claw, jumps off of walls, backflips, screams like a psycho, and yodels. How could I not love him?

Sure, Benimaru looks like he's gay, but he's actually an ELECTRIC WOMANIZER. Also, his Engrish "I lave yoo" taunt after he takes someone down in KoF '98 is classic..
Virtua Fighter:
Sure, she's new, but monkey kung-fu is awesome. In earlier games, I'll use Lion.
MvC2:
Tron's always in my team. The drill, the Servbots, the fire, everything combines into an awesome character. (It doesn't hurt that I had a crush on her when I was 8 and playing MML for the first time, either.)
Tatsunoko vs Capcom:
KARAS
This guy is a badass. He's got counters galore, a grappling hook, can reflect hadoukens with his sword and is nearly unstoppable when I combine him with my next character:
Darkstalkers:
Laugh all you want about how her sprite has never changed (until Cross Edge), but Morrigan is a speedy little shoto. Her dashes are awesome, her combos are fun, and her wing-transforming animations are damned cool. Also, she can split into two for her special attacks and after Darkstalkers 3, her sister lives inside her.

Blazblue: Iron Tager. He's the first character I feel really got down the idea of tossing opponents around like rag dolls.
