I can only think of two videogame protagonists off the top of my head that fall under your term of "Arab". I assume you mean someone who is from southwest Asia or northeast Africa, people who would be pigeonholed as simply "Muslim" by the western world. Anyways, the two characters were the Prince from the Prince of Persia series and Altair from the recently released Assassin's Creed.

Huh, I can't believe I didn't think of "The Prince" from Prince of Persia. That was kind of obvious. And maybe it's because American's would feel odd about shooting white people who aren't Nazis or Commies.

I've seen those games for sale here in Dubai. Its kind of hilarious how Arabs are protrayed in most forms of media, but it doesn't really bother me much.
