Have you ever played Animal Crossing? It's practically an -entire game- of awesome music that you barely ever hear (or even if you hear it, it gets passively ignored).
So. Much. Music. I can't even find half of it on Youtube. :(
I also thought I was the only person who liked Animal Crossing's soundtrack.

I really liked the Killer 7 soundtrack. Of course, I tend to like offbeat left-field music.

'”Those Chosen By The Planet”: Final Fantasy VII
^That was the song I was looking for. I was looking for the Sephiroth music ffvii. Youtube kept coming back at me with 'one-winged angel' just like you mentioned. But, this is the true Sephiroth music in my mind.
One i'm reminded of that almost fit the article.. but actually shows how to place an obscure tune perfectly, is Neverending Journey by Nobuo Uematsu for Lost Odyssey..

If i remember right, it only plays when you're in the overworld map area and it's only later in the game you spend more time in the overworld..
So you're used to hearing this great folky, catchy travel tune that encapsulates your ragtag group roaming the globe.. then much later you finally hear it play out past 1:40 and the guitars kick in with the smoothest 'out of nowhere' epic change and the feel changes from peaceful travelling to travelling into impending danger and knowing you're going to attack it head on with all you've got.
The game had a great soundtrack but for some reason that song stayed with me, feels like comfort food whenever i play it :P
When it comes to fantastic songs in games that are really underused, the first example that springs to mind for me is Zidane's Theme from Final Fantasy IX. It only shows up in one scene on the first disc, and is never heard in the game again. Which is odd, given that it's the theme of the main protagonist. It's a fantastic song, but then so is every other song in the FFIX soundtrack.

As for the DKC suggesstions, there were actually a few songs from DKC and DKC2 that I was considering using, because there's a lot of unique tunes that are only used for one or two levels in those games. In the end Haunted Chase won out because in addition to being used in one place, it was constantly being interrupted by the sound effects and bonus stages.
It's great to hear so much feedback from you all though. I never thought this series would continue to get so much attention when I first started it. :3
I was thinking that on the other hand, sometimes confining great music to select/out of the way areas in a game really make it more valuable to the game and the specific moment it's chosen for. I was replaying Beyond Good and Evil, and one of the reasons why the main fight theme is so important to me is that it only plays during the introductory fight and then at the end as a build up to the climax. Just like a theme returning at the end of a song, its application lends the game a sense of closure.

One of my favorite songs is the options menu from Shiren the Wanderer on the DS. It's a rather short and simple little tune, but also brilliant.
Another gem that I remember is the finl boss from Kirby Canvas Curse. A seriously intense song.
Though I'd have to disagree on a few things, especially how you praise Mario Galaxy's incredibly bland soundtrack yet state that Killer 7's quite cool tunes aren't noteworthy. :P

The only reason I can forgive the one-time use of the theme in the Space Storm Galaxy is because of the way it is altered to sound like it's coming from an old-time radio when you hit the switches that slow down time. That was a touch of sheer brilliance. And great call on Diddy's Kong Quest. I've always loved that track as a more direct version of Night on Bald Mountain (which happens to be in my top 5 for classical pieces).
Being a one-time deal isn't all bad either. It makes the piece unique, and stand out against overused themes. One-Winged Angel and Pokey Means Business! are fine examples of tracks that always evoke a strong reaction due in part to their one-time use.
